Ingredients
  

  • 1 can 19oz chickpeas, rinced and drained
  • 1 dill pickle small dice
  • 1/2 celery stalk small dice
  • 1 shallot or small onion small dice
  • 3 tbsp. vegan mayo
  • 50 g pickled jalapeno peppers or to taste
  • 2 nori sheets or 2 tbsp. dulse flakes
  • 2 tbsp. lemon juice
  • 1/2 tsp. lemon pepper
  • salt to taste
  • 1 cup 175g sweetcorn, drained - OPTIONAL

Instructions
 

  • Place chickpeas in a bowl and mash them with a fork or potato-masher, leaving some bigger parts for more texture.
     
    Blend the nori sheet in a high-speed blender until you get nori flakes or use dulse flakes. Add to the chickpeas along with the rest of the ingredients and stir until well combined.
     
    To use in a sandwich: Layer a ciabatta bun with the 'tuna' mix, mayo, pickled jalapenos, and vegan cheese slices on top. Place on a baking sheet, under the broiler for 4-5 minutes or until the vegan cheese melts.
