
Peanut Butter Oatmeal Cookies with Chia
They’re not just cookies—they’ve got a good balance of fiber, protein, and healthy fats, making them a better snack option than most store-bought ones.
Ingredients
- 1 C oats
- 1/2 C flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 C coconut oil (melted)
- 1/4 C peanut butter
- 1/4 C maple syrup (or agave)
- 1 tsp vanilla extract
- 2 tbsp chia seeds
- 2-3 tbsp plant milk (soy, almond, oat) as needed for consistency
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix dry ingredients: In a bowl, combine oats, flour, baking soda, baking powder, and chia seeds.
- Mix wet ingredients: In another bowl, whisk together melted coconut oil, peanut butter, maple syrup, vanilla, and soy/coconut milk.
- Combine wet and dry ingredients until a dough forms. If too dry, add a bit more milk.
- Shape cookies: Scoop small spoonfuls of dough onto the baking sheet and flatten slightly.
- Bake for 10–12 minutes, until golden brown. Let cool before enjoying!
